We specialize in producing premium, handcrafted flavored varieties of rum, vodka, whiskey and moonshine inspired by local lore and the flavors of Florida. Family-owned and -operated, we are committed to making world-class spirits using regional agriculture. Hemingway Rum Company, Makers of Papa’s Pilar Rum
Hemingway Rum Company, makers of the award-winning Papa’s Pilar Rum, hosts a unique Experience Center in the heart and soul of Key West, Florida. The historic building holds a functioning Distillery and Innovation Lab where guests can discover the art and science of distillation, rum making and blending, and wood barrel aging and finishing. Private distillery tours and cocktail classes are offered daily. Alongside the Distillery is a Papa’s Pilar Rum Tasting Bar, a Trading Post with licensed Hemingway gear and memorabilia, and an event space. Manifest Distilling
MANIFEST was founded on the principle that a great vision can only be achieved through unity. Individual talents and abilities are integral to our success, with the sum always being greater than the individual parts. Since our opening in Sept. 2016, our team has grown from an original four to a dozen in 2022.
MANIFEST celebrates the best of what American craftsmanship has to offer, from the American-made distillation equipment to the grains sourced from a network of co-ops throughout North America. Our distillation is influenced by training from the famed brewing school, the Siebel Institute, researching and shadowing master distillers throughout Kentucky and elsewhere, along with a resilient desire to never stop learning, growing and chasing our best selves.

Preez Distillery
Preez Distillery is the first and only craft distillery located in Largo, FL. Established in 2019, the distillery is focused in the distillation of vodka, flavored vodkas, and liqueurs. As of April 2023, the distillery introduced a new rum into the line up with other spirits in the near future.
ChainBridge Distillery
ChainBridge Distillery is a family owned and operated multi-award-winning distillery. Our family has a wine making background from the well-known Tokaj wine region of the northeastern border of Hungary and Slovakia. Along with wine, the family grew up with the Hungarian culture of “Pálinka” Eau De Vie style Fruit Brandy. We are “bridging” the same European Brandy culture and other unique innovative spirits to South Florida and beyond.
Kozuba & Sons Distillery
Founded in 2005 in Poland, Kozuba & Sons is a family-run distillery that produces premium spirits. Now at home in St. Petersburg with over 15 years of experience, the Kozubas are focused on sharing their passion with the American market, beginning with Florida. Kozuba & Sons hand-crafted, small batch spirits are made from the finest ingredients, using meticulous processes. Each bottle possesses the trademark Kozuba essence: a striking combination of quality, craftsmanship, and taste.
Dark Door Spirits
The story of our beginning is not one of destiny, but one of innovation and self-motivation. Co-founders Matthew Allen and Brandon Marshall started the Cerberus Craft Distillery and the Dark Door Spirits Brand with one simple goal in mind: to create a damn good product. Marshall and Allen realized they had authentic ideas, ability, conviction and means to make those ideas a reality.
Gamblers Bay Distillery
Gamblers Bay Distillery is a family owned and run distillery located in Tampa, FL. While we may be new to the craft distilling market, our family recipes date back 120 years starting in Europe, traveling through Canada to land in Tampa, FL where we call home. Distilling fine quality spirits is at the heart of everything we do. We are endeavoring to become a new staple on everyone’s top shelf with spirits our family has been enjoying for decades.
As a double MD, Master Distiller and Medical Doctor, Mark is continuing his families rich history in distilling when he is not treating patients in the Emergency Room.
Islamorada Brewery & Distillery – Islamorada
Located in the heart of Islamorada, Islamorada Distilling opened in December 2017 with the goal of capturing the essence of the Florida Keys — where natural beauty meets the ultimate blend of relaxation and recreation — in our lineup of hand-crafted, small batch spirits. Our 100 gallon column still fits like a glove in our small facility on US 1, nestled between the historic marinas, resorts, and boutiques of our island home. Its five plates create a clean, smooth spirit for every occasion.
Inspired by the rich history of island rums and Islamorada Rum Runners, we started crafting our line of spirits with two barrel aged rums, both of which are grounded in the traditional methods of rum making but with our own unique twist, maturing while they absorb the vibrant flavors of oak and island air. Complementing these award-winning rums is our robust Spiced Rum, a zesty blend of spices, oak, and vanilla. We extended into Vodka, using a corn base to create a super smooth, gluten free spirit that is at once cleanly neutral and distinct. This profile provides the ideal base to showcase the botanical notes of our two contemporary Gins: one that captures the citrusy flavors associated with the Florida Keys and the other distilled and macerated with local hibiscus for a fresh floral character.
Whether sipped on the dock by a blazing sunset, blended into an icy cocktail with your toes in the sand, or enjoyed miles from our tiny fishing village, Islamorada Brewery & Distillery will always bring out the spirit of the Florida Keys.
