Fernweh Distilling Co. began as most ventures do – a wild idea. After a year of planning, training, and a detail-oriented renovation of our historic riverfront location from 2016-2017, our wild idea finally manifested into the Fernweh Distilling Co. you see today. We take a small batch and, in some cases, single barrel approach to bourbons, whiskies, and more – all distilled and aged for those with a burning spirit for adventure. Needing a hub for our adventurous, curious-minded guests, we also established a full-service bar and restaurant with a focus on globally inspired bites and artisan cocktails. It is never a dull moment at Fernweh Distilling Co. with tastings, new product launches, special events, and unique learning opportunities!

As we took our first steps, we understood that the key to realizing our vision of creating the perfect spirit is control. If we wanted a premium final product, we needed to be sure that everything going into the product is premium as well.
The Mash Water:
We take extreme measures to make sure that the base of our spirit mash is exactly what we need to create the desired outcome. Our mash water is filtered several times using active carbon, reverse osmosis, and ultraviolet filtration to ensure we start with the purest water. We then re-mineralize the water using a specific amount of completely naturally occurring mineral supplements for optimum flavor and yeast health during fermentation.
The Grains:
Quality spirits can not be achieved without clean and fresh grains. We are lucky to reside in the heart of the Midwest where the freshest grains are most abundant. Although the choices are overwhelming, after much experimentation, we were able to choose just the right corns, ryes, and barley malts to fit our spirit flavor profile.
The Fermentation:
One of the most important keys to the production of premium spirits is the fermentation process. Healthy and happy yeast is crucial to successful fermentations. We hand select specific yeast strains and pay very careful attention to how we treat them including mineral supplements, optimum PH ranges, and optimum mash fermentation temperatures. Yeast is our best friend at Fernweh Distilling Company!

The Distillation:
After the yeast have done their job, our work continues with the discerning senses of the distiller. Once the stills are heated and the spirits rise through our copper 4 bubble-plate whiskey column, we use our noses and taste buds to select the purest cuts of the run for collection. With the desire to produce only the finest spirits, we allow very generous head and tail cuts to ensure that what we collect are the absolute hearts of the run.
The Maturation:
There is no substitute for plenty of time and quality cooperage to put the finishing touch on all great aged spirits. At Fernweh Distilling Co. all of our aged products are matured in select Missouri White Oak barrels that have been air dried for at least 3 years and given a medium char in order to naturally smooth each spirit and impart the most oak flavor possible.

There are no corners cut and no gimmicks employed in our distillery production procedures. Every batch is created with the same hard work, time, patience, and attention to the finest details.
